Any word can mean anything and often means different things to different people, sometimes meaning several things all at once. Language is a human invention to allow the communication of ideas, it is not an interdimensional sledgehammer which re-forms the cosmos according to what buttons you press on a keyboard or what notes you strike as you speak. The words are in not bound to the thing they describe, they are just conveiniant ways to represent those things. As such, the definition of a word can be absolutely anything and it will be a valid word, since it just a representation of an idea. In this way, defining the "Universe" as "all which exists" is entirely valid since, for a start that is what it means anyway, and also that existing words can be given more localised or technical definitions so that new words do not need to be created. In this sense, one could define "turnip" as being "all that exists" and it would be entirely valid, since it just means that within that conversation references to "turnip" meant "all that exists" and not "a root vegetable." It's a bit like algebra, where one uses letters to represent numbers which are not strictly bound to any particular entity, they are merely ways to represent ideas. In language words merely represent ideas. "Universe" represents the idea of "all that exists" - or at least it did in this conversation. If you find "cosmos" a more comforting word then by all means use that, the important thing is to understand what is being represented because the word is just the formal device through which that representation is communicated.
