Jackie's great. I like Police Story 3. It's great.
I seem to recall Operation Condor being the first one of his I watched to the end, so when it got to the outtakes reel I grew a whole new appreciation for the guy beyond being "That funny little Chinese fella from the Cannonball Run."

wow.... after that summary, it's a miracle that Jackie Chan is still alive and able to move around, and even more of a miracle that he's still doing more stunts like these.

Police Story 3: Supercop was the first R rated film I ever saw in a theater. It's on Youtube in Cantonese with English subtitles, I've been meaning to rewatch it.
I've been on a bit of a Jackie Chan marathon, but only watching what DVD's i've been able to get my hands on, rather than in any intelligent order.
Started with Mr. Nice Guy which I found in a bargain bin. I remember watching this in theaters as a youngin' and thinking this was a bit downhill from his earlier action flicks, a little more kiddie. Little did I know it would be regarded as classic Jackie compared to some of the stuff he put out later on.
But I don't mind some of the poor American kiddie-type films he's put out recently, I don't think it makes him any less of a badass. I remember seeing an interview with him about Rush Hour 3, and he said he doesn't enjoy these kinds of films, doesn't really care about them, doesn't understand the humor. Plus I'm probably sure he can't do the really hardcore impressive stunts too well anymore. Anyway, what he does with these more-recent crap American films, he takes the Hollywood money he makes back to China to fund projects he really cares about, like training stuntmen. That's pretty cool.
After Mr. Nice Guy, re-watched Rumble in the Bronx, Police Story 4: First Strike, and Operation Condor 2: The Amour of the Gods*
*(in America, Amour of God II: Operation Condor was released first as "Operation Condor", and Amour of God was LATER released as a prequel called Operation Condor 2: The Armour of the Gods... so bottom line, I watched the one with the near-fatal tree stunt)
Can't find any more DVD's around, will probably have to torrent 'em. Seeing as how I've already watched First Strike and am keen on watching Supercop, I might as well finish out the series in reverse order by watching Police Story 2 and Police Story 1.
I remember seeing The Protector when I was little and thinking it was the most badassedest shit ever, even though I now realize from reading reviews it was apparently a stinker, I want to re-watch that.
Any suggestions of what to watch after I finish that lot?
The police story ones are amongst his best. Try Who Am I?, some awesome driving in that as well as the usual daft stunts.
"Best" Jackie injury I saw was the one where he jumps onto the hovercraft. Can't remember which film, possibly First Strike? He runs and jumps from a bridge stancheon iirc. Broke his ankle, completed the film in pot with a sneaker painted on the pot.
Guy is legendary. Read his biography, My Life in Action. The shit he went through as a kid training int he chinese opera it's no wonder he's as fucking hard as he is.
Oh yeah and if you've not seen it, The Forbidden Kingdom. The film is ok, but the fight scene between Jackie and Jet Li is something us fans have been waiting for for twenty odd years. Doesn't disappoint :D

I've been trying to find a torrent, but all I get is that other The Protector. Although since you say that movie is good, maybe I'll watch that too.

Aw snap, I forgot to mention, Who Am I is another one I've already re-watched. Loved it since I was little; absolute classic. Silly nonsense story about some expandy-weapony-???-imaginary material that's never explained, great little emotional bits from Jackie trying to remember who he is, fuggin Mistubishi Evo action, and got damn, sliding 21 stories down that building, and ACTING as he does it!!! Sliding down the building would have been pants-shitting enough, but he has to try standing up and then falling head first too.
And the hovercraft stunt, that was in Rumble in the Bronx. If you watch the final cut in slowmo, you can see his ankle snap right before the camera cuts away. You KNOW he really finished the film with the broken ankle, because in another outtake, when he jumps from the roof of the fake Lamborghini onto the hovercraft (already having stopped the hovercraft), his fake sneaker falls off the cast. Shit, I can't imagine jumping from one surface up to another with a broken ankle, and who knows what other scenes he did with that broke ankle.
Officially adding The Forbidden Kingdom to the queue of movies to watch... Dan Wei, any particular suggestions outside of the ones I've mentioned?
Oh, and I picked up a DVD for an older Chan flick I've never heard of before called "Dragon Fist", is it any good?
Hahahaha, that's hilarious and awesome. It's interesting that Chan's had such a long and loyal arrangement with Mitsubishi.
After watching a few clips on YouTube, I have to see Thunderbishi- I mean Thunderbolt. FTO's and GTO's abound, oh my! Looks like a Chinese Days of Thunder.
Okay, I have two questions.
In Rumble In The Bronx, did Jackie Chan really do the fancy driving (180 J-turns, etc) in the fake Lamborghini?
And in Twin Dragons, did Jackie Chan really play the piano?
He doesn't use stunt doubles, but it looks like he may use stunt drivers and stunt pianists.
